12 Cooking Tips For Making the Best Stir-Fries

Wow, what a list! I hope you enjoyed this list of stir fry recipes because they are some of my favorites. I have a lot more stir fry recipes – browse all of them and find something new to make for lunch or dinner.

Even though a stir fry is a simple recipe, I have some more tips I wanted to share with you. These tips will help you make the best stir-fries that could even taste as good as takeout.

  1. Cook the meat first. Start by cooking the meat first and then remove it from the pan before adding your vegetables. This prevents the meat from becoming overcooked and tough.
  2. Cut meat thinly: Another essential step is slicing the meat very thin before cooking it. In fact, placing the meat in the freezer for 10-15 minutes can help you slice it more easily. Thinly sliced proteins cook quickly and evenly.
  3. Use fresh garlic and ginger. The fresh ginger and ginger not only adds incredible aromas but it has a powerful flavor that makes the entire recipe taste better. It will not have the same burst of flavor with garlic or ginger powder.
  4. Add edamame. It's a really healthy and protein packed ingredient that adds some flavors to your stir fry.
  5. Add the sauce last. If you add the sauce too early, you risk overcooking the stir fry or ending up with soggy veggies. The sauce only needs to be added the last couple of minutes.
  6. Use your favorite vegetables. This is a really easy way to use up any leftover veggies that you have in your refrigerator.
  7. Cornstarch is your friend: Many stir fry recipes rely on cornstarch to thicken the sauce. It is used in two ways. Either toss the protein in the cornstarch before cooking. This will also help it get crispy and then thicken the sauce. It can also be added to the sauce directly.
  8. High heat is a must: Many times stir-fries don't turn out because the pan isn't hot enough. When cooking in a wok, it should be very hot. In a regular pan or skillet, you also want to crank up the heat. Water should sizzle and evaporate immediately when splashed on the pan. If it doesn't, it isn't hot enough.
  9. Cook in batches: If the meat can't fit in the pan in a single layer, then cook it in batches. Crowding the pan will cause the meat to steam instead of sear. This results in chewy meat.
  10. Prep everything in advance: Stir fries cook very fast, so always prep everything in advance before you start cooking. That includes the meat, vegetables, and sauce. If you try and chop the veggies while the meat cooks, you will undoubtedly end up with overcooked meat.
  11. Use the right pan: For the best results, cook these dishes in a wok or cast-iron skillet. Stir fries need high heat and these work best.
  12. Stir often: This should be obvious given the name, but make sure to stir the dish often so that nothing burns. Since the dish cooks at high heat, nothing should cook in one place to too long.

Frequently Asked Questions

Here are some questions people often ask about making healthy stir fry recipes. If you don't see your question in this list, please leave it in the comments.

What goes with stir fry instead of rice?

There are a bunch of healthy alternatives to rice. Quinoa is a high-protein grain that tastes incredible when you stir fry it. Cauliflower rice is really increasing in popularity, especially among low-carb dieters.

Spaghetti squash tastes delicious as a replacement for pasta or noodles. You can also use shirataki noodles or zucchini noodles in stir fry recipes.

All three of those choices have different textures, so use your favorites!

Can I make these recipes without a wok?

You don't need a wok to make the best stir fry. You can make a delicious stir fry using a cast-iron skillet or your favorite frying pan. You can also skip the stove entirely and use stir fry sauce over the meat and veggies and bake it in the oven.

How do you keep stir fry vegetables crispy?

The best way to keep the veggies crispy is to avoid overcooking them. Heat the pan over high heat. When the pan is nice and hot, then add the oil. Then, stir fry the vegetables quickly, so they are cooked on the outside and still have a nice crunchy texture.

How much oil should I use for stir fry?

You don't need much oil - you aren't deep frying your meat and veggies. You only need about 1-2 tablespoons of oil in your skillet or wok. This is enough to basically cover the bottom of the skillet.

Which oil is best for stir fry?

The best oils for stir fry are soybean oil, avocado oil, vegetable oil, or peanut oil. This is because all four of them have high smoke points. You can also use olive oil for your stir fry. It might not have the same smoke point, but it is a healthy choice that adds a nice flavor.

Do you add water to a stir fry?

If you find the vegetables are burning or cooking too quickly, you can add a tablespoon or two to the pan. This will basically flash steam the vegetables and ensure they are cooked through without burning. This can be especially effective when cooking larger vegetables or veggies that take a long time to cook. Cutting the vegetables thinly also helps ensure they don't burn.

Why does my stir fry taste bland?

The most common reason that a stir fry tastes bland is a lack or sauce, soy sauce, or salt. Typically speaking, you can amplify the flavor or a stir fry quickly by adding some extra soy sauce, tamari, or coconut aminos.

What do you cook first in a stir fry?

Generally speaking, start by cooking the meat first and then setting it on the side. Then start with the vegetable that takes the longest to cook. This includes vegetables like onions, carrots, broccoli, and cauliflower. Then finish with quicker cooking vegetables like snow peas, green beans, leafy greens, and bean sprouts.

Why is my stir fry soggy?

There are two main reasons that a stir fry becomes soggy. The first reason is that the pan was overcrowded. This causes the meat and/or vegetables to steam instead of fry.

The other main reason is adding the sauce too early. When you add the sauce too early, the vegetables and meat will boil in the sauce and get soggy.

Lastly, using frozen vegetables instead of fresh ones can lead to a soggy stir fry. Frozen vegetables release a lot of water as they cook and are naturally softer than fresh vegetables.

How long do I cook the vegetables in a stir fry?

Generally speaking, no ingredient in a stir fry will take longer than 4-6 minutes to cook. Thinly sliced proteins cook in 1-2 minutes. Hearty vegetables take 4-5 minutes as long as they are sliced thin. Quick-cooking vegetables cook in 2-3 minutes.
