Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cups carrots, diced
  • 4 cloves garlic, minced
  • 1/2 tsp oregano
  • 1/2 tsp dried thyme
  • 2 bay leaves
  • 1.5 lb boneless skinless chicken breast (or thighs)
  • 6 cups chicken broth (good flavor)
  • 1 cup orzo
  • 1/4 cup freshly squeezed lemon juice (more to taste)
  • 2 tbsp fresh dill (or more, I like double)

Step 1 Heat the olive oil in a skillet over medium high heat. Add the onion, carrots, and celery. Cook for 5-7 minutes until beginning to soften. Add the garlic, oregano, and thyem. Cook for one minute, until nice and fragrant. If you like a little spice, add a pinch of red pepper flakes here as well.

Step 2 Add this mixture to the slow cooker along with the chicken, chicken broth, and bay leaves. Cook on low for 4 hours or until the chicken is cooked through.

Step 3 Remove the chicken and chop or shred. Add the chicken back to the slow cooker along with the orzo and lemon juice. Turn the heat to high and cook for 15-30 minutes until the orzo is nice and tender, stirring as needed so the orzo doesn’t stick.
