List of Ingredients:

  • 2 lbs boneless skinless chicken breasts, sliced (or whole)
  • 3 bell peppers, sliced thin (red, yellow, and green)
  • 1 onion, sliced thin
  • 4 garlic cloves, minced
  • 14 oz canned diced tomatoes with green chilies
  • 4 tbsp fajita seasoning (homemade or store-bought)

1 Add the chicken breasts to the bottom of the slow cooker. Sprinkle with half of the fajita seasoning. Add the peppers, onions, and garlic on top.

2 Cover with the diced tomatoes and the remaining fajita seasoning. Stir to coat.

3 Cook on high for 1.5-2 hours or low for 3-4 hours until chicken is cooked through. If you cooked the chicken whole, slice or shred it.
