Ingredients

  • 1 lb lean pork tenderloin, sliced thin
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tbsp fajita seasoning
  • 1 red onion, sliced thin
  • 2 bell peppers, sliced thin (green, red, orange, or yellow)
  • 1/4 cup cilantro
  • 8 corn tortillas (or flour tortillas)

Step 1 Combine the pork, olive oil, lime juice, and fajita seasoning in a large bowl. Let the pork marinate for 15-30 minutes.

Step 2 Heat a heavy cast iron skillet over medium high heat. Add a drizzle of olive oil. Add the peppers and onions. Season with salt and pepper. Cook for 4-6 minutes (longer for softer veggies), stirring as needed until the veggies are tender-crisp and lightly charred. Remove and set aside.

Step 3 Add the pork to the same skillet. Cook for 1-2 minutes until lightly browned. Stir and cook for another 1-2 minutes until pork is just cooked through. Do not overcook.

Step 4 Add the peppers and onions back to the pan. Season if needed with salt, pepper, or seasoning. Squeeze fresh lime juice over the top and sprinkle with cilantro.

Step 5 Serve in warm tortillas with fresh cilantro and extra lime juice. Add all your favorite toppings or pile on to greens or cauliflower rice.
