  • 2 tbsp mint, chopped (or basil, dill, etc)
  • 1/2 cup feta cheese, crumbled
  • 1 lemon, juice
  • Salt and pepper
  • 1/2 cup tzatziki
  • 2 cups butter lettuce
  • 2 cups cooked quinoa
