What you need:

  • 2 lbs lean beef chuck roast (or flank steak, but I prefer chuck roast fully trimmed)
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2 tbsp fresh orange juice
  • 2 tbsp lime juice
  • 2 tbsp low sodium soy sauce
  • 1 tbsp ancho chile powder (or regular)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp oregano

Step 1 Combine the orange juice ,lime juice, soy sauce, and spices in a small bowl.

Step 2 Place the chuck roast(or flank steak) in the bottom of the slow cooker with the onions and garlic. Pour the spice mixture over the steak.

Step 3 Cook on low for 6-8 hours until you can easily shred the beef. Chuck roast will take closer to 8 hours. Flank steak will be done after about 6 hours.

Step 4 Remove the beef from the slow cooker and shred using two forks. If you are making flank steak, you can also thinly slice it for larger pieces.

Step 5 Preheat the oven (or a grill) to 450 degrees. Spread the shredded beef on a baking sheet covered with foil. Drizzle with a little of the cooking liquid. Cook for 15-20 minutes for beef chuck (or 7-10 minutes for flank steak) until the steak gets caramelized and crispy on the edges. Taste and add a little extra cooking liquid if needed. Serve as tacos or bowls.
