What you need:

  • 1.33 lbs. haddock (or other fish)
  • 3/4 cup Panko breadcrumbs (or crushed Ritz crackers)
  • 1/2 cup imitation crab meat, diced
  • 2 tbsp. butter, melted
  • 2 tbsp. lemon juice
  • 1 tbsp. parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Step 1 Turn your oven up to 500 degrees. You could use the broiler, but the fish cooks more evenly on a rack in the oven. You can also grill the fish on a piece of foil. Pat the fish filets with a paper towel to remove any excess moisture.

Step 4 Place in the oven on a baking sheet and cook for 5-7 minutes or until the fish flakes easily. It should take around the same time on the grill. To grill: Place the fish on a large piece of heavy duty aluminum foil and place on the grill. Grill for 5-7 minutes until fish is flaky and cooked through.
