Ingredients

  • 1 lb tomatillos
  • 2 jalapeno peppers (swap serranos for a spicier sauce)
  • 1/2 yellow onion
  • 2 garlic cloves
  • 1/2 cup fresh cilantro
  • 1 tsp kosher salt (or chicken bouillon, more to taste)
  • 1/2 tsp cumin
  • 1/4 tsp Mexican oregano
  • 1 tbsp olive oil (or vegetable oil)

Step 1 Add the tomatillos, onion, jalapenos, and garlic to a saucepan. Cover with water. Bring to a boil and cook for about 10 minutes until the the tomatillos are softened. They will turn from a bright green color to a lighter green color.

Step 2 Add the tomatillos, garlic, jalapenos, and onion to a blender with about ½ cup of the cooking liquid. Add the fresh cilantro, salt/chicken bouillon, cumin, and oregano. Blend until very smooth.

Step 3 Heat the olive oil in a saucepan over medium heat. Add the blended salsa. Cook for about 5 minutes over a low simmer. The sauce should deepen in color. Taste and season as needed.
